Crisped Tofu with Greens and Peanut Dressing

So Delicious! You just need to set some time aside to press the moisture out of the tofu. This makes for a great “Starter” to any meal or perfect for a lunch too.  I love the peanuts, as I can sprinkle them on just about anything!  This is the type of dish I like to get when we go out and it always seems so fancy.  I assure you, this you can handle because I can. ;)

Serves 6-8

1/3 cup white miso (soybean paste)
1/3 cup mirin
1/3 cup rice vinegar
1 tbs finely grated peeled fresh ginger
1/2 cup chopped dry-roasted peanuts, divided
5 tbs canola oil, divided
2 (14 oz) packages water-packed firm tofu, drained
8 cups salad greens
Minced chives

1. Combine first four ingredients, 1/4 cup peanuts, and 3 tbs oil in a small bowl; stir with a whisk.

2. Cut each tofu block crosswise into 8(1/2-inch-thick) slices. Arrange tofu on paper towels. Top with paper towels and top with a heavy pan. Let stand for 30 mins. Remove tofu from paper towels.

3. Heat 1 tbs oil in a large nonstick skillet over med.-high heat. Add 8 tofu slices to pan; saute about 4 mins on each side or until golden. Remove from pan and drain on paper towels. Repeat with remaining 1 tbs oil and 8 tofu slices. Place greens on plates. Top with tofu slices, miso mixture (dressing) and chopped peanuts. Garnish with chives.  SO fabulous!
